Bo bo (Bubur) cha cha is a colorful dessert. It does not only sound fun but it is very rich in flavor. The amazing fragrance from the pandan leaves simply completes this dessert.



Ingredients

  • 140g taro (diced)
  • 70g purple sweet potato (diced)
  • 70g yellow sweet potato (diced)
  • 1 banana
  • 40g sago
  • 50g boiling water
  • 80g tapioca flour
  • 160g sugar
  • 250g coconut milk
  • 3 pandan leaves (aka screwpine leaves)
  • Some salt to taste
  • Red and green food colouring

Steps to prepare the dish

  1. Steam the diced taro, purple sweet potato and yellow sweet potato for 20 minutes.
  2. Cook sago in a pot of boiling water until translucent. Sieve the cooked sago to remove water and add cold water to the cooked sago. This will avoid the sago from sticking together.
  3. Cut banana into bite pieces.
  4. To prepare the tapioca jelly:
    a. Create a dough by adding water to the tapioca flour. The water has to be boiling hot or else the flour wouldn’t come together as a dough.
    b. Divide the dough into two and add colours (red and green) to each of the dough.
    c. Flatten the doughs and cut them into smaller pieces.
    d. Boil the pieces of dough until they turn translucent.
    e. Once cooked, put them into a boil of cold water to avoid the tapioca jellies from sticking together.
  5. Add sugar to 250ml of water. (Do not put all sugar and adapt the sweetness according to taste according to your preference)
  6. Add coconut milk and allow it to simmer.
  7. Then add the taro, sweet potatoes, sago, tapioca jelly and lastly, banana.
  8. Allow the Bo Bo Cha Cha to simmer.
  9. Enjoy it warm :)
